Santa Fe Tacos
Tacos are a staple in our household and for good reason – my kids absolutely love them! Some of them like all the toppings, while others prefer a more simple approach. The great thing about tacos is that they’re a quick and easy meal to make. In just fifteen minutes, dinner is ready to go!
As the meat, onions, and garlic are cooking on the stove, I use that time to chop up some fresh tomatoes and lettuce to create a taco tray for the kids to assemble their own creations. I love setting up a mini taco bar so that everyone can customize their tacos to their liking. It’s a fun and interactive way to enjoy a meal together as a family.

Santa Fe Tacos
Ingredients
- 1 pound ground meat turkey, lean ground beef, etc.
- 1 onion chopped
- 2 garlic cloves minced
- 1 tablespoon homemade taco seasoning
- 1 can black beans drained
- 1 can corn drained
- Tortillas corn or flour
- Toppings: Lettuce tomato, sour cream, salsa, cheese, avocado, guacamole, onions, scallions, cilantro, jalapeños, lime wedges
- Homemade Taco Seasoning:
- 2 teaspoons kosher or sea salt
- 2 tablespoons chili powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dried oregano
Instructions
- In a large sauté pan, brown the ground meat. Add the onions and garlic and cook until tender.
- Stir in the homemade taco seasoning and cook for 1 minute while stirring.
- Stir in the drained black beans and corn.
- Serve the mixture in tortillas with your choice of toppings.
- To make the homemade taco seasoning, combine all the spices together and mix well. Store in an airtight container.
