Mint Chocolate Chip Smoothie and Ice Cream
This is absolutely delicious and perfect for St. Patricks Day.. I promise your kids are going to LOVE this one. No food coloring, no added sugar, nothing artificial.. Just plain wholesome yumminess that is kid approved. The spinach is for Color – You will NOT be able to taste spinach at all.. Only Mint & Chocolate along with a frozen banana that gives a rich creamy texture all while keeping it vegan and dairy free. Makes a yummy breakfast or a delicious guilt-free dessert.
I have made this with both almond milk and coconut water, they are equally delicious! Use what you have on hand.. I fill the blender to the top with fresh organic spinach, a large handful of mint and a splash of almond milk or coconut water, blend until smooth. Then add frozen bananas and 1 cup of liquid. Blend until smooth. Top with chocolate chips.
Ingredients
- 2 packed cups fresh spinach
- 1 loose cup fresh mint leaves
- 1 cup liquid of choice + additional splash of liquid
- 6 Bananas, Peeled & Frozen
- 1 cup mini chocolate chips
Instructions
- Fill a high powered blender or food processor with spinach, mint and a splash of almond milk or coconut water, blend until smooth. Then add frozen bananas and 1 cup of liquid. Blend until smooth. Top with chocolate chips.
Notes
LIQUID of Choice: Any nut milk will work great. Coconut water is delicious as well.
If you prefer a really thick ice cream texture, just use the splash of liquid in the first step and leave out the other cup of milk/liquid. Also plain mint ice cream is great too. So cool & refreshing with a Bonus of fresh breath at the end!
