Eggplant with Goat Cheese & Pine Nuts

Ingredients

  • 1-2 eggplants halved or cut into slices
  • 3 tbsp extra virgin olive oil
  • 1/2 c pine nuts, toasted
  • 3 oz. goat cheese, crumbled
  • 1/4 c basil, thinly sliced
  • 2 tbsp fresh mint, chopped
  • 1 lemon (juice & zest)
  • 1/2 tsp kosher salt
  • pepper to taste

Instructions

  1. Preheat grill to medium-high heat.
  2. Brush both sides of the eggplant slices with olive oil and season with salt and pepper.
  3. Grill the eggplant slices for about 3-4 minutes per side, until they are slightly charred and tender with grill marks.
  4. In a small skillet, toast the pine nuts over medium heat until they are golden brown and fragrant. Set aside.
  5. To assemble the dish, place the grilled eggplant slices on a serving platter.
  6. Crumble the goat cheese over the eggplant slices.
  7. Sprinkle the toasted pine nuts over the goat cheese.
  8. Zest the lemon & Finely chop the fresh herbs and sprinkle them over the dish.
