Baked “Fried” Onion Rings & Pickles
Homemade Healthier Fried Food Fake Out
I have a weakness for onion rings. My husband loves fried pickles, so I decided to come up with a healthy version while still getting my fried food fix.
Just doing a google search for “baked fried pickles” returns 4,400,400 results. Or check out a Pinterest Search using the same phrase yields thousands of mouth watering results. Using the same concept mixing the egg & flour to make a wet batter I decided to add my own spin with the added spices.
I LOVE “frying” this way.. It’s healthy, much cleaner & quick. In the restaurant we did NOT have a fryer so we “oven fried” our fried dishes for a healthier option to some favorites like Croquettes, eggplant parmigiano & fried chicken. The Secret Ingredient to achieve this: PANKO – Breadcrumbs won’t get crispy enough – Panko does. Crispy, crunchy, YUM! Panko is a must have in your pantry.

Ingredients
- 3-4 large pickles sliced approx. 1/4 in thick
- 2-3 large vidalia onions, sliced 1/4 in thick
- 4 eggs
- 2 T Worcestershire sauce
- 1 tsp sea salt or kosher salt
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 tsp smoked paprika
- 3/4 cup flour
- 1 – 2 cups seasoned panko bread crumbs
Instructions
- Preheat the oven to 425 degrees. Slice the pickles & onions into slices 1/4 inch in thickness. Lay sliced pickles on a paper towel and lightly pat dry to remove excess moisture.
- In one bowl, add the flour & eggs and beat them together. Add worcestershire sauce, salt, garlic powder, onion powder & smoked paprika.
- In a separate bowl (or ziplock bag) add the panko
- Coat each pickle chip & onion with the seasoned flour/egg mixture then coat each piece with the panko.
- Arrange on a cookie sheet in an even layer.
- Bake @ 425 degrees for 7 – 10 minutes or until desired “crunch" is reached.
Serve the pickles with Ranch Dressing for dipping. But they are delightful just plain.
