P.H.A.T. Salad

I have eaten this salad for years.  I LOVE IT!  I never had a name for it, I just made it and ate it.  So when I ended up with 50 organic avocados at the cafe just waiting to be transformed into a delicious meal instead of becoming the usual guacamole, I put this dish on the daily special menu. It was very popular and worked for all diets: vegetarians, vegans, gluten free, and even the raw food customers.

Back to not having a recipe name… What the heck was I going to call it?  Avocado Tomato Salad, no that sounds too blah.  I thought, it needs to be something catchy.  Its a REALLY good healthy salad but people have to order it off a menu in words, not picture… If only they could just taste it.

So I came up with the PHAT Salad.

So what exactly IS the PHAT Salad –

Here is a little Hip History on the word “PHAT” pronounced “FAT”.

PHAT is (my kids say, was) a slang term used for “Pretty Hot And Tempting”.   I decided to use the name PHAT for Pumpkin seed, Hemp seed, Avocado & Tomato.  Cute, huh?

This salad will NOT make you fat.  It actually does the opposite.. It is such a healthy, quick, easy and did I mention, delicious salad.  Now that I think about it, Maybe I should rename it The Skinny PHAT Salad.

Here is what you’ll need

P.H.A.T. Salad

Ingredients

  • FOR THE VINAIGRETTE
  • 1/4 cup freshly squeezed lemon juice (2 lemons)
  • 1 teaspoon dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup olive oil
  • FOR THE SALAD
  • 2 Avocado, chopped
  • 2 Tomatoes, chopped
  • 4 Tbsp Pumpkin seeds
  • 2 Tbsp Hemp seeds

Instructions

  1. In a bowl, whisk together the lemon juice, dijon, honey, salt, and pepper. Slowly pour in the olive oil, whisking constantly.
  2. Place the avocado, tomato, pumpkin seeds & hemp seeds in a large bowl. Drizzle with vinaigrette and toss lightly. Taste for seasonings and serve immediately.

We served it on top of a bed of organic baby greens in the cafe but honestly, I like to just eat it as is
